Ye im using Dispenser timers.
They shot out an item that dissapears after 5 min and that controls the clock.

I wonder if it is possible to have a video recording software record me playing Minecraft as well as the in's and out's of the chatter in TeamSpeak?

The first option any screen recording software would work. The second option you need a soundcard which supports recording of Stereo Mix, Mono Mix, or What U Hear.

With regards to the clock. I have been thinking it over all day and the only thing I can think of would involve SOOOOO much circuitry and blocks everywhere. It'd be a mess!
This is of course utilizing a clock that didn't rely on dispensers -
uh fraps is capable of recording anything aslong as the programs output is your speakers not your head phones, and the mik at the same time
