As far as what to build goes ... think about any building you've seen that you like the look of, and start with that. Perhaps even look at other minecraft builds, but rather than copy them block-by-block, build your own version using the same styling, and perhaps different materials
You will probably find that part way through your build that you will have your own ideas on how things should be done - try them out and see how they look
