As you might now, the server now runs 1.8.1, whereas Minecraft has been updated to 1.0.
So, in these few simple steps, I will explain how to downgrade to 1.8.1, only using Windows 7's native techniques. No downloads or mods required.
- Go to your Minecraft folder. The easiest way is to start Minecraft, click on "Mods and Texture Packs", click on "Open texture packs folder" and then go up one folder.
- Next, right-click on the "bin" folder and select the bottom option, "Properties".
- Click on "Previous Versions" tab.
- Restore to the most nearest date on which Minecraft was known to be still 1.8.1. For example 18.11.2011, or earlier.
- After you are done with that, start Minecraft normally.
- When it asks you if you want to update, click on "Not now"!
- Continue as you normally would.

Oh, and when you go to 1.0 after the server has been updated, just select "Force update" on the login options. That will get you back to date. : )
